Pico de Gallo (rooster’s beak in Spanish…yeh I know) is a fresh tomato salsa that is delicious on just about anything. Even though it is but one of a myriad of different salsas in Spanish cuisine, this is what us gringos blanket label as being ‘salsa’. Serve it on chips, tacos, eggs, toast…anything. It is also a key ingredient in other recipes, like guacamole.
